Surface-mount channels fix onto the surface, while the recessed channel sits into a cut-out so it lies flush. Choose based on the surface you are fixing to.

What sizes are available?
Surface-mount in 17 × 7mm, 20 × 10mm and 50 × 35mm, and recessed in 17 × 7mm, each in a 3m length. Check the channel width against the width of your strip.
